Tatenokawa Soube Wase is a Junmai Daiginjo sake crafted from the rare and historic Soube Wase rice, a native variety from Yamagatas Shonai region that had disappeared due to its cultivation difficulty. Revived by Tatenokawa Brewery in 2019 from just 1.9 kg of preserved seeds, this rice presented unique brewing challenges due to its hard texture, small starchy core, and high protein content. After three years of meticulous experimentation, the brewery developed a method that brings out the rices rich umami and layered complexity. Polished to 45% and brewed with ultra-soft water from Mt. Chokai, the resulting sake is smooth, deep, and elegantly expressivean exceptional revival of Japans sake heritage.
